A grill-your-own yakitori place serving Kumamoto’s local chicken, Amakusa Daio

Located near the Hirayama Onsen village, Jidorian Sanzo serves yakitori grilled over charcoal using Amakusa Daio, a local chicken breed that’s the biggest of the kind in Japan. These chickens were raised stress-free in the wilderness with mineral water from a nearby subterranean river, and therefore reliable and safe in quality. The meat is loved for its beautiful red color, juicy, satisfying texture, and its fullness in flavor and umami. At Jidorian Sanzo, guests can also try out the chicken in sashimi style when the right kind is in stock. The flavor of the chicken is heightened with the venue’s original salt, made by blending three different kinds of salt and roasting them in a pot. To promote local food, the rice served here is a local Kikuka brand called Hino Hikari, made with great care by a contract farmer and cooked over perfectly controlled temperature. Make sure to visit early, as the restaurant closes once it runs out of stock for the day.
