Shaved ice with amazake milk syrup

Marukame Shoyu company, founded in 1870, produces soy sauce and miso using riverbed water flowing from Mt. Aso and local soy beans and barley as much as possible. In June 2019, to mark the 150th anniversary of its foundation, the company opened Hakko Café Marukame (hakko means fermentation in Japanese) at the back of its direct-sales shop. The café specializes in shaved ice and uses fermented ingredients such as soy sauce, miso, and yogurt as well as fresh seasonal fruits. The café's original amazake milk syrup is homemade from amazake (sweet drink made of fermented rice), which is prepared in a small amount at a time in order to optimize the texture and flavor. Shaved ice is served in unique flavors like Bankan (grapefruit-like Japanese fruit) cream yogurt, Miso caramel with nuts topping, and Soy sauce brown sugar with soy flour topping. The menu also includes drinks like Fermented tapioca drink and Amazake soy tea.
